Each release of our Sherry Cask Malt has tried a slightly different approach: very fruity and sweet, or very Oloroso-heavy, or sometimes delicate and flowery. We often change distillery and age for this bottling, since the only rule is that it must be from Speyside and fully matured in first fill sherry casks! This release is another variation on the theme. At the nose it’s nutty, flowery, organic, with a hint of peat smoke. At the palate, it retains this nutty, malty and slightly peated style, with a hint of cinnamon cookies… but this time it’s lighter, sharper, very crisp, quite dry and not buttery at all. It’s a clean, mineral and very elegant whisky, with a very old fashioned fragrance.
