An unusually long finish, much longer than our standard: 46 months in a first fill Pedro Ximenez hogshead! And yet, don’t expect a winey monster: it’s extremely balanced and elegant. At the nose, initially it’s a bit astringent, and winey indeed. But then it’s the fresh, citrusy note of the spirit that speaks: it’s even very distinctly herbal, with notes of hay and chamomile. The first sip reveals a very silky texture: it’s not explicitly sweet, but it’s creamy, biscuity. Only moderately raisiny and not particularly dominated by the wine, it has a very tight mineral side. Orange peel, fragrant tea, and the herbal notes get deeper in the aftertaste, where it also suddenly becomes very spicy.
