An unusually long finish, much longer than our standard: 46 months in a first fill Pedro Ximenez hogshead! In spite of such a long influence from the wine, it remains medium bodied and not dominated by the raisiny notes. At the nose it offers notes of oranges and citrus, then hay, flowers, and a distinct bread-like aroma. Plenty of cereals and flour! The first sip reveals a very silky texture: it’s not explicitly sweet, but it’s creamy, biscuity, again with bready and pastry-like notes. The winey influence remains well contained, and it’s the mineral and waxy character that wins. Orange peel, herbal tea, and also some fleeting balsamic notes of camphor. It grows markedly more peppery, tannic and spicy in the finale.
