The combination of our very active Pedro Ximenez casks and of a distillate from an almost imperceptibly peated batch created a very unusual and entertaining expression of Bunnahabhain. Its profile is not as overtly sweet as could be expected considering the rich treacly sweetness of PX, although of course there is plenty of raisins and dried plums… but with a nice contrasting sour and mineral touch. What keeps it very interesting is the toasted, even slightly charred, background note… and of course the aforementioned peat. Although certainly not a peat monster, you can definitely feel a hint of smokiness and phenols which fight with the sweet fruit, and the interaction (as it often happens) results in curiously leathery and organic notes. Fun and unusual.
