When the spirit is first rate, a long unhurried maturation in a traditional refill bourbon cask is often the best choice. No special effects, but plenty of elegance, old fashioned substance and subtlety! At the nose it starts out very delicate, but add a small drop of water, wait and pay attention: very soon, its complexity will surface. Vanilla, banana, creamy malty sweetness, but then the slightly acidic note of peaches, propolis, and delicate oak will compensate the initial gentle approach. At the palate, it develops over time too. Initially smooth, with yellow fruits, honey, plenty of beeswax, cereals, and then it builds in intensity revealing a very robust body that contrasts with its initial gentleness: pepper, a touch of tannins, lemon peel, still creamy but increasingly dry and mineral. It finally ends on a slightly balsamic note.
