A special single cask bottling, selected according to our taste from a whole batch of a rare Speyside malt, enriched in colour and taste by 12 months finish in particularly active Pedro Ximenez barrels. The influence of the dark and sweet dessert wine is obvious at the nose: plenty of raisins, dried plums, but overall it remains explicitly winey, rather than only sweet and fruity. This is probably the most elegant and drier cask of the lot, and it gladly accepts a drop of water to open up at the palate: it’s rich, with a deep note of toasted brown sugar and dark chocolate, but also a hint of tar, some tannic astringency, and an aromatic touch of balsamic vinegar. Muscular, but well balanced between sweet and dry, toasted and creamy.
