Bottled at full cask strength, and highly dangerous in its intensity! It’s a powerhouse of alcoholic strength, and of sherry goodness: finished for 52 months in a first fill Pedro Ximenez hogshead, it definitely has acquired a marked winey influence which is already evident from the colour. Still, we would suggest to approach it with caution… and a drop of water, to tame it down and appreciate its nuances more easily. Extremely fruity at the nose, but in a pleasantly sour style: red and black cherries, raisins, dried plums, and a balsamic touch of camphor and old oak. Our recommendation to add water stands even more true before the first sip: at full strength, it’s very dry and tannic, with notes of balsamic vinegar. It fully reveals its fruitiness only when slightly diluted: orange juice and rinds, sour red cherries, raisins, a slightly herbal hint, and of course a huge winey character. It still remains on the drier side, never explicitly sweet, with a final wave of tannic astringency.
