Our wonderful Marsala casks are always a fun occasion to make experiments, and the most surprising ones are often those based either on very robust malts, or very weird ones. Since Tobermory falls in both categories, the result of this three years finish in Marsala casks are actually not surprising at all… From the honey sweet and winey nose, to the palate which is just as sweet, the influence of the cask is distinctive. The dominant traits are dried figs, balsamic vinegar, and a mineral, farmy and oily note which reminds us that this still is a Tobermory with its trademark character. The overall impression, though, is never explicitly of Marsala until the very end, where it explodes in all of its dry nuttiness.
