A Highlands single malt from a distillery we love, and that required some extra care: refined in a first fill Pedro Ximenez butt for 32 months, and then in another Pedro Ximenez butt – this time third fill – for 36 more months to tame its exuberance without adding further winey notes. A testament to the art of an independent bottler with a sartorial style! Extremely dry, citrusy, winey at the nose, it plays on its notes of orange juice and orange peel, with a pleasantly sour touch, and a hint of old oak. It’s only a prelude to the very fruity palate: plenty of pears, orange juice, grapes, kiwi… maybe a fruit salad? It’s dry but juicy, not explicitly winey, with a tannic oaky touch. It becomes markedly spicy, lively, almost astringent in the finale.
