We assembled this bottling from two casks with complementary qualities: one was finished for 64 months in second fill Oloroso sherry, the other one for an identical amount of time in second fill Pedro Ximenez. The first was drier, the second one was darker and with notes of toasted cereals… and the marriage of the two has perfect complexity and balance. At the nose it’s very nutty and only slightly winey, on top of the fragrant notes of breakfast cereals that are so typical of this distillery. At the palate, again it starts on the trademark notes that are expected from Fort William: again cereals, and a touch of candied orange and marzipan. It’s slightly tannic, medium bodied, but also fresh and mineral, with toasted pastry notes. Towards the end, it grows drier, spicier, even more toasted, with a nice contrast between honey and salted peanuts.
