To reach the perfect balance between the character of the single malt and the sherry, we opted for a longer but slower and more gradual finish, in a first fill Oloroso butt for 56 months. The result undoubtedly bears the influence of the Spanish wine… but the interaction with the whisky was quite unique this time, with an even fruitier character than expected. At the nose, it’s completely dominated by the aroma of sweet and ripe oranges, marmalade, and a hint of acacia honey: truly sunny and playful. The same notes are found at the moment of tasting: plenty of orange juice, candied orange peel, very rich and smooth. Water is not strictly needed, thanks to the juiciness and roundness of the mouthfeel. Only towards the end, its character turns more towards a mineral side, with a very peppery and pleasantly sour touch.
