A subtler variation on our successful ‘Quercus Alba’ formula, in the search of the perfect balance between ex-Bourbon casks and Virgin Oak, this time with a bigger emphasis on second fill barrels. It’s the perfect marriage of two very different styles of maturation, fully retaining the character of the spirit and adding subtle layers of complexity. The result is fully Islay, with all the salty, tarry and smoky notes that are expected from this coastal distillery, and at the same time a slightly fuller body, a trace of sweetness, a peppery undercurrent. It’s certainly a tad more muscular than the traditional distillery style, but without masking its inherent freshness. Development in the glass brings a slightly earthy tone, a quizzical leathery quality, a touch of liquorice too.
