The most balanced Haddock we have bottled so far: thanks to the 12 years of maturation and the choice of casks, no specific flavour screams out calling for attention. On the contrary, all the typical flavours of this secret distillery are intricately integrated into a very smooth whisky. Slightly farmy and organic at the nose, with notes of ripe fruit but also a whiff of leather, wine and peat, it takes several minutes to evolve at the palate, slowly disclosing its nuances. It’s very chewy but not exceedingly sweet, rather very mineral and peppery. It has a very faint touch of smoke, a gentle kiss from the tannins, but then again it steers towards notes of red apples and a slightly salty hint of seaweed. Complexity is the word.
