From a group of casks from the same distillation batch, all finished for 42 months in first fill Oloroso, one clearly stood out during our periodic monitoring samplings, and we couldn’t believe what we were tasting: it was so mature, rich and complex compared to its brothers, a night and day difference! To celebrate this discovery, we opted for a special release at 100 UK Proof. The nose is quite flamboyant, loaded with overripe fruits (bananas, apples, plums, raisins), with a touch of estery fragrance and balsamic vinegar. As deep and aromatic as a liqueur! At the palate it’s rich, raisiny, not thick but certainly on the sweet side, with plenty of notes of black tea, slightly tannic and spicy. The alternance of sweet and spicy, with a textured mouthfeel, goes on until the warm and honeyed finale.
