For the debut under our label of this relatively young but very interesting Speyside distillery, we opted for a finish of 30 months in first fill Oloroso butts, and the result is delicious! The nose is fragrant, with fruity notes of pears and apples, together with the more mature, oxidated and autumnal touch of the sherry. Only moderately winey, it feels very balanced, with slightly earthy hints, camphor, delicate oak and tamarind. At the palate, dry and sweet play together: candied citrus and apricots, soft tannins, black tea: it’s deep and rich, but also fresh. In the end, it remains very lively and spicy, but tamed by the smoothness of raisiny sweetness.
