Caol Ila is usually bottled rather young, to ensure that its fresh and salty vibrancy is preserved. Only few casks are stored for longer maturation, and the resulting bottlings are as exquisite as they are rare. This Collector’s Edition stays true to the style of the distillery, with age adding not a too heavy oak influence or taming the intense peat character, but simply adding elegance and complexity. Dry and slightly austere, leafy and very mineral, yet retaining a juicy and slightly waxy and organic backbone, this Caol Ila is quite similar in style to some Port Ellens. Definitely recommended with a drop of water to help it release all of its aromas, an Islay malt to be savoured slowly.
