The ultimate in delicate and ethereal flavours for a grain whisky: extremely gentle, flowery, with a nuanced complexity that can be caught only by the most refined palate. To avoid spoiling this beautifully fragile fragrance, we opted for a finish of almost 8 years but in a third fill Oloroso cask which only added a slight hint of fruity sweetness. We didn’t want to overwhelm its delicate character with an overly winey note! At the nose it speaks of springtime: fresh, sunny, breezy, with a hint of lavender, chamomile, hay and blossoming meadows. At the palate, it has a restrained sweetness of cereals, with a hint of vanilla and butter, the freshness of mint, and again a very flowery touch. It remains on a firm, mineral and dry style thanks to the choice of cask for the finish. Very clean in its finale, with only the slightest increase in tannic presence, and an herbal overtone.
